So, I may be missing the Mexico sunshine that I enjoyed a couple of weeks ago on vacation a little bit. Although, Chicago has been seeing some sunnier days of late – hooray! Speaking of sunshine, I wanted to share this sunny citrus smoothie with you. It’s a great way to savor some of the last citrus of the season before spring fruit makes a come-back. In this version, I combined a blood orange and a couple of little mandarin oranges, but you can vary the citrus depending on what you have on hand.
I realized recently that I seriously do not make enough smoothies. They are so simple and delicious, I don’t know why I have been letting myself miss out! If you are getting tired of your usual berry smoothie, you will definitely want to try this one.Print
- 1/2 cup coconut milk
- 1/4 cup milk (or non-dairy alternative)
- 2 mandarin oranges, peeled and segmented
- 1 blood orange, peeled and segmented
- 1 banana
- 1 tablespoon chia seeds
- Place all ingredients in blender and puree until smooth.
