Description

This simple and healthy peach compote is the perfect accompaniment to your morning yogurt or waffles. 


Ingredients

  • 6 ripe peaches, chopped (~4 1/2 cups chopped)
  • 1/4 cup maple syrup
  • 1 tablespoon fresh squeezed lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Dash of ground nutmeg
  • Dash of sea salt

Instructions

  1. Add all of the ingredients to a medium sized saucepan. 
  2. Bring a simmer over medium heat. 
  3. Simmer until peaches soften and thick sauce forms. 
  4. Turn off heat and allow to cool. Transfer to a jar and store in the refrigerator up to ~1 week. Keep in the freezer if you want to store it longer.
