Chickpea and Butternut Squash Curry

Ingredients You'll Need - Butternut squash - Chickpeas - Red onion - Red curry paste - Coconut milk - Spinach - Ginger - Sugar

Add oil, onion, and red curry paste to a large, deep skillet and sauté 3-5 minutes.

Add the butternut squash and coconut milk. Simmer until squash is softened.

Stir in the chickpeas, spinach, and sugar. Cook until spinach is wilted. Taste and add salt if needed.

Serve over rice with fresh cilantro and lime.
