Vegan Pesto Pasta

Don’t let summer end without making this simple vegan pesto pasta. Other than fresh basil, all you need are a few pantry staples like pasta, pistachios, and olive oil to make this delicious pasta dish.

Ingredients you'll need: basil, pistachios, lemon, garlic, salt, pepper, olive oil and pasta

Make your pesto in a food processor.

Add pesto to cooked pasta and serve immediately or store in the fridge for up to a week. To freeze, add to an ice cube tray until firm then store in ziplock bag.

Stir about 1-2 tablespoons of reserved pasta water in with the pesto to help it cling to the noodles.
