Vegetarian Black Bean Enchilada Skillet

Ingredients You'll Need - Zucchini - Onion - Jalapeno - Belll pepper - Black beans - Enchilada sauce - Corn tortillas - Cheese - Chili powder, garlic powder, cumin

Add oil, zucchini, pepper, and onion to skillet and sauté until softened. Stir in the spices.

Add the enchilada sauce and bring to a simmer. Stir in the black beans and tortillas.

Season with salt if needed and then cover with shredded cheese. Broil for a minute or two to melt the cheese.

Serve with lime wedges, avocado, sour cream, and hot sauce.
