Carrot Ginger Juice (Blender)

Add this delicious and simple carrot ginger juice made in the blender to your morning for a bit of sunshine in a glass! Pair with your favorite breakfast entree like oats or eggs for a healthy balanced breakfast.

Ingredients

  • 3 large carrots, peeled
  • 1 apple, cored
  • 3/4 cup water
  • 1 lemon, juiced
  • 1/2 inch fresh ginger

Instructions

  • Add all of the ingredients to a juicer and process. You can also add to a blender and puree until smooth.
  • Transfer blended carrot mixture to a fine mesh strainer lined with a piece of cheese cloth over a large bowl. Use a spatula to press all the juice out of the pulp. (I also twist up the top of the cheesecloth and press the pulp with my hands too.)
  • Serve over ice. Add a splash of sparkling water for some bubbles!

Notes

  • Recipe makes about 14 ounces of juice total. Store leftovers in a jar with a lid in the fridge. Keeps up to 2-3 days in the fridge. 
  • Add Turmeric: add even more antioxidants by adding a 1/2 inch piece of fresh turmeric or 1/4 to 1/2 teaspoon ground turmeric before blending.
  • Add a Kick: before blending, add a pinch of cayenne pepper for a spicy kick.
  • Add more Citrus: instead of apple, add an orange to the blender before mixing.
