Whole Wheat Strawberry Dark Chocolate Cookies

- 1 1/2 cups whole-wheat flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoons sea salt
- 1 stick salted butter
- 1/2 cup dark brown sugar
- 1/2 cup granulated white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 4 ounces dark chocolate chopped in 1/4 inch pieces
- 1/2 cup chopped freeze dried strawberries
Preheat the oven to 350 degrees Fahrenheit.
In a large mixing bowl, mix the butter and sugars together until smooth. Add the egg and vanilla and mix well.
In a small bowl, combine the flour, baking powder and soda, and salt.
Gradually add the flour mixture to the butter mixture and mix until smooth.
Stir in the chocolate and strawberries.
Scoop dough on to a cookie sheet by the tablespoon-full.
Bake for 12-14 minutes or until lightly browned.

- Freezer: store cooled cookies in an airtight container or ziplock freezer bag in the freezer for up to 6 months. Allow to thaw on the counter overnight (or you can pop one into the microwave to warm up for a few seconds.)
