Strawberry Mint Margarita

These delightfully refreshing strawberry mint margaritas are a fruity treat for hot summer days. The fresh mint adds a bright pop of flavor that pairs so well with the strawberry.

Ingredients

  • 1 1/2 cups frozen strawberries
  • 3 ounces silver or blanco tequila
  • 2 ounces Triple Sec like Cointreau
  • Juice from 2 limes ~3-4 oz juice
  • 8-10 fresh mint leaves
  • 1 tablespoon of simple syrup* sugar, or honey (optional)
  • 1 cup ice
  • Margarita/Kosher salt

Instructions

  • Spread margarita salt onto a small plate. Rub one of the limes around the rim of each serving glass. Roll the rim of each glass in the salt. Shake any excess salt off into the sink.
  • Add the strawberries, tequila, Cointreau, lime juice, mint, simple syrup (if using), and ice to a blend and puree until smooth.
  • Pour into 2 (10 oz) prepared glasses and garnish with fresh strawberry, a lime wedge, and a sprig of mint.

Notes

  • Have fresh strawberries? Just add more ice! Use up to 2 cups of ice to make a thick, icy margarita when using fresh strawberries. 
  • To make simple syrup: heat 1/2 cup water in a small saucepan until hot but not boiling. Stir in 1/2 cup granulated white sugar and stir until dissolved. Turn off heat and transfer to a jar. Store in the fridge.
