Ingredients

  • 1 15 oz can white beans (great northern or cannellini), drained and rinsed
  • 2-3 large handfuls arugula
  • 1/4 cup vegan pesto
  • 1/4 cup crumbled vegan feta
  • 1/4 cup chopped unsalted pistachios
  • 2 teaspoons lemon juice
  • Zest from 1/2 lemon
  • 2 teaspoons chopped capers
  • Sea salt and ground black pepper to taste

Instructions

  • Add all of your ingredients to a large mixing bowl. Toss to coat and serve.
