INGREDIENTS

Loosely wrap your beets and roast at 400 degrees Fahrenheit until tender. You could also use pre-cooked beets from the store. 

Add the cooked beets, lemon juice, garlic, nutritional yeast, and coconut milk to blender and puree.

Warm the pureed sauce in a skillet until bubbling.

Stir in your cooked pasta as well as about 1/4 cup of pasta water. Stir to combine.

Garnish with vegan parmesan, chopped pistachios, and fresh parsley.
