Creamy Carrot Soup Recipe

INGREDIENTS

Add the onion and oil to a stock pot and cook until tender. 

Add the rest of the ingredients and simmer until carrots are fork tender. 

Transfer the soup to a blender and puree until smooth. (Or use an immersion blender in the pot.)

Top with fresh chopped herbs and/or croutons to serve.
