Chocolate Tofu Mousse

INGREDIENTS

Add tofu to a fine mesh strainer fitted over a bowl and let it drain while you melt the chocolate.

Use the microwave or a double boiler to melt the chocolate. 

Add all the ingredients to a blender or food processor and puree until smooth.

Puree until smooth, using a spatula to scrape down the sides as needed.

Chill for at least 1-2 hours to allow it to firm up. Serve with your favorite toppings!
