Easy Vegan Skillet Lasagna

Saute the onion and zucchini until softened. 

Add the garlic, Italian seasoning, and plant-based crumbles. Saute 1-2 minutes. 

Add the marinara and water. Bring to a boil.

Add the broken lasagna noodles. Cover and cook 25 minutes. Stir every 5 minutes or so.

Add spoonfuls of vegan ricotta (if using) evenly around the pan. 

Add shredded vegan mozzarella and broil 1-2 minutes to melt. 

Garnish with some fresh parsley and a sprinkle of red pepper flakes. 

Serve with a side salad for a delicious weeknight meal!
