Vegan Loaded Sweet Potatoes


Rub washed potatoes with olive oil and poke with a fork on all sides. Roast in oven at 400 F for 45 minutes or until tender. 

Start the filling by sautéing onion and green pepper in a skillet.

Once the onion is softened, stir in the spices. 

Stir in the corn, black beans, and salsa and cook for about 3-5 minutes.

Make avocado topping in small food processor. Just pulse until sauce forms but still has some texture.

Assemble your loaded potatoes and dig in!
