Roasted Sweet Potatoes and Broccoli

INGREDIENTS

Add the cut vegetables, oil, and seasoning to a large mixing bowl and toss to coat. 

Add to a baking sheet making sure there is room between pieces for even baking. Bake at 400F for 30-35 minutes.

Serve with your favorite protein. (We like either vegan sausages or BBQ tempeh.)

Optional variations:  - Use everything bagel seasoning - Add nutritional yeast - Drizzle with balsamic vinegar - Add a sauce like peanut sauce or tahini sauce - Drizzle with ranch dressing
