Vegan Cashew "Chicken" Stir Fry

Ingredients You'll Need

Seitan Cashews Veggies Soy Sauce Garlic  Ginger Vegetable Broth Sesame Oil Cornstarch Maple Syrup Green Onion

Whisk together the sauce ingredients in a bowl and set aside.

Saute the seitan in a skillet with oil until golden brown. Remove from skillet and set aside.

In the same skillet, add the chopped vegetables and sauté until crisp -tender, about 5-7 minutes. 

Add the sauce, cashews, and seitan to the skillet and sauté with the vegetables for 2 minutes.

Serve stir fry over rice or noodles. Garnish with cilantro, green onion, and sesame seeds.
