Vegan Stuffed Shells

Ingredients You'll Need - Jumbo shells - Tofu - Nutritional yeast - Pasta sauce - Frozen spinach - Garlic - Dried herbs

Add tofu, nutritional yeast, garlic, dried herbs, salt, and pepper to food processor and puree til smooth.

Thaw the frozen spinach in the microwave and then add the ricotta.

Add 1/2 cup of the pasta sauce to baking dish. Top with the cooked shells.

Add tofu ricotta to the shells with a spoon or piping bag.

Top with the rest of the sauce and vegan cheese. Cover with foil and bake for 25 minutes. Uncover and bake another 10-15.
