Vegan Taco  Pasta (One Pot!)

INGREDIENTS

Add the oil, onion, pepper, and zucchini to a pan and sauté.

Add the taco seasoning and veggie crumbles. Saute for 1-2 minutes.

Add salsa and water and bring to a simmer. 

Add pasta and cook until al dente. Add shredded cheese and stir til melted.

Garnish with avocado, cilantro, and tomato to serve.
