Pickled Red Onion Recipe

Add the salt, sugar, and black peppercorns to the bottom of a bowl or glass jar. Slice your red onion into very thin slices.

Add the boiling hot water and white vinegar. Stir with a fork or whisk until the sugar and salt are dissolved.

Add the thinly sliced red onion and let it sit out on the counter until it is room temperature. Cover with the lid and transfer to the refrigerator.

Chill in the fridge for at least 2 hours up to overnight until pickled. The color of the onion will brighten over time.

How to use: add to tacos, grain bowls, salad, avocado toast, sandwiches, and more.
