Healthy Pumpkin Oatmeal


– 1/2 cup old fashioned oats – 1/2 cup soy milk – 1/2 cup water – 1/4 cup canned pumpkin – 1 tablespoon maple syrup – 1/2 teaspoon pumpkin pie spice – Pinch of sea salt

To Make in the Microwave: Add all your ingredients to microwave safe bowl.Cook for up to 5 minutes until thickened. Stir occasionally.

Microwave tip: Use a larger bowl than you think you need as oatmeal can swell up as it cooks.

To Make on the Stovetop: Add all of your ingredients to a small saucepan. Brigng to a Simmer over medium heat. Cook until thickened.

Stovetop: Oats should be thick and ready to serve in about 5 minutes.

To Serve: Top with chopped pecans, almond butter, and pumpkin seeds.
