Miso Soba Noodle Soup

INGREDIENTS

Add oil and shiitake mushrooms to dutch oven and sauté. 

Add the ginger, garlic, broth, bok choy, and soba noodles. Simmer until noodles softened.

Scoop out 1/2 cup of the hot broth and whisk with the miso. Add back to the pot along with the tofu.

To serve, add carrots, green onion, and sesame seeds.
