Tofu Power Bowl w/ Spicy Almond Sauce

INGREDIENTS

Add chopped sweet potato, broccoli, and cabbage to pan. Coat with oil and spices and roast until tender.

Add pressed tofu to a separate baking sheet lined with parchment paper. Spray with cooking oil and add seasoning.

While veggies and tofu cook, make the spicy almond sauce.

Assemble bowls by adding cauliflower rice/grain, roasted veggies, tofu and almond sauce.
