Vegan Lemon Loaf

INGREDIENTS

Make the flax egg, then add all the wet ingredients to a large bowl.

In a separate bowl, whisk together the dry ingredients. 

Combine the wet and dry ingredients. Stir just until combined. 

Add the batter to a loaf pan lined with parchment paper and bake until golden brown.

While the loaf bakes, make the lemon glaze by whisking together powdered sugar, lemon juice, and zest.

Add the glaze to the cooled loaf and allow to set before slicing.
