Marinated Butter Bean Salad
This marinated butter bean salad is herby, lemony, garlic-y, all the things you want in a good bean salad. This one is great for meal prep as it tastes even better after it has had time to chill.

- 1/3 cup olive oil
- 3 tablespoons white wine vinegar
- 1/2 teaspoon Italian seasoning
- 1 shallot, finely chopped
- 1/4 cup roasted red pepper (from a jar), chopped
- 1/4 cup Castelvetrano green olives, chopped
- 1 clove garlic, minced
- 1 lemon, juice & zest
- 1/4 cup fresh parsley
- 1 can (15 oz) butter beans, drained and rinsed
To a large bowl, add the olive oil, vinegar, Italian seasoning, shallot, red pepper, green olives, garlic, lemon juice & zest, and herbs. Stir well.
Add the butter beans and stir to coat in marinade. Cover bowl or transfer to an airtight container and refrigerate for at least 1 hour to overnight to let the flavors soak into the beans.
Serve this marinated bean salad on its own or with crackers, on toast, salad, or pasta!
If you can't find butter beans, you can easily swap them for white beans or chickpeas instead. A dried bean option that also works are Gigante beans. You'll need to pre-cook them but the ones from SIMPLi are my favorite.
