These are my marry me beans --it's a one pot dish that's creamy, flavorful, and packed with plant-based protein and fiber. This version uses coconut milk (or cashew cream) to add creaminess without dairy.

Ingredients

  • 2 (15 oz) butter beans, drained and rinsed
  • 1 tablespoon olive oil
  • 4 cloves garlic
  • 7 oz sun-dried tomatoes, chopped
  • 3/4 cup coconut milk
  • 1/2 cup vegetable broth
  • 1/2 cup grated vegan parmesan
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red chili flakes
  • 1/2 teaspoon sea salt
  • 3-4 leaves fresh basil

Instructions

  • Add olive oil, garlic, and sun-dried tomatoes to a large skillet with tall sides. Sauté for 2-3 minutes or until garlic is fragrant.
  • Stir in the coconut milk, vegetable broth, parmesan, Italian seasoning, chili flakes. Bring to a simmer.
  • Add the beans and simmer for 3-5 minutes or until beans are heated through. Season with salt and pepper to taste. Garnish with fresh basil to serve.
