INGREDIENTS

Boil potatoes for 15 minutes. Cool and dice. You can also use store-bought diced potatoes.

Add diced potatoes, red pepper, onion, and garlic pepper to skillet and sauté until crispy.

Make the tofu scramble with medium tofu, nutritional yeast, turmeric, and black salt.

Assemble your burritos, adding extra toppings as desired.

Great for meal prep as these are also freezer friendly.
