Hummus Bowl with Cauliflower

Ingredients: 

Add chopped cauliflower to a bowl with the oil and spices. Toss to coat.

Spread cauliflower into single layer on baking sheet. Bake until tender.

While the cauliflower roasts, make quinoa on the stovetop.

Make the tzatziki sauce with yogurt, fresh dill, parsley, lemon zest, and garlic powder.

Assemble your bowls with quinoa, cauliflower, hummus, tzatziki, and fresh veggies.
