Easy Vegan Tofu Scramble

This easy vegan tofu scramble recipe can be whipped up in a matter of minutes from a few ingredients so you can make it whenever the craving hits. I love serving it over buttered toast but it would also make a great filling for breakfast tacos or paired with a short stack of waffles.

Last weekend, I was craving something savory for breakfast and decided to whip up a batch of this easy vegan tofu scramble. It had been ages since I made it and I quickly fell in love with it all over again. They are one of my favorite vegan breakfast recipes! Eggs are great and all, but this tofu scramble may be even better! (Bonus, no animals are harmed when making tofu scramble. 🥰)

Why You’ll Love this Recipe

  • I’ve been making and tweaking my scramble for years and it is seriously the best tofu scramble recipe!Just a handful of simple ingredients is all you need. This recipe takes just 10 minutes from start to finish.
  • This recipe is vegan, gluten free, dairy free, and egg free.

Ingredients You’ll Need

  • Medium-Firm Tofu: when making tofu scramble at home, I like to use medium firm tofu rather than extra-firm tofu because the softer texture most resembles regular scrambled eggs. No need to press it – you’ll just crumble it straight into the skillet.
  • Black Salt (Kala Namak): a little bit of black salt goes a long way. To get that classic eggy flavor in our tofu scramble, you’ll want to use this secret ingredient. Pick up some black salt from Amazon for all your vegan egg recipes.
  • Nutritional Yeast and Garlic Powder: adds some savory flavor to these delicious vegan eggs. Ran out of nutritional yeast? Here are 9 nutritional yeast substitutes.
  • Turmeric Powder: adds the yellow color to these tofu eggs to make them look more like real scrambled eggs. You can skip it, but your eggs will be white.

What is the best kind of tofu to use for scrambled tofu?

I like to use medium-firm tofu when making tofu scramble, NOT extra firm tofu. Tofu scramble that is too dry is the worst! So, I like using firm tofu because it has a little higher liquid content and you don’t have to add more liquid like some recipes for tofu scramble.

Step One: All your olive oil or vegan butter and block of tofu to a non-stick skillet over medium heat. Use a wooden spoon or spatula to break the tofu up into smaller pieces.

Step Two: Add the turmeric, black salt, garlic powder and nutritional yeast. Sauté until tofu is warmed through and moisture from the tofu has cooked off. Taste and add more salt if needed and a few cracks of black pepper.

Expert Tips

  • Add some veggies: Add color and nutrients to this vegan scramble by sautéing some red peppers or fresh spinach in the pan before you add the crumbled tofu.
  • Don’t overcook your tofu: the best part of this easy tofu scramble recipe is the short cook time! You really only need to cook your tofu for about 5 minutes. If you overcook the tofu, it can turn dry and rubbery.
  • Storage: leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, add to a skillet to warm up on the stove.

What do you serve with tofu scramble?

  • Toppings: vegan cheese, hot sauce, green onions, chives, vegan cheese. Sometimes, I’ll even sprinkle on some of my homemade coconut bacon (it’s so good!).
  • Sides: breakfast potatoes, avocado toast, fresh fruit, hash browns, waffles, pancakes, vegan bacon, buttered toast.

Can you freeze tofu scramble?

The texture of tofu changes when it is frozen so it become chewy when thawed. It is best to serve this easy tofu recipe within 3 days of preparing.

Is tofu scramble healthy?

Yes! Tofu scramble is high in protein, but is low in fat and has no cholesterol so it can be a heart healthy alternative to traditional eggs.

What is tofu scramble made of?

Tofu scramble is usually made from crumbled tofu, turmeric powder, black pepper and seasonings such as garlic powder, onion powder, and/or black salt.

Ingredients
  

  • 1 package (14 oz) medium firm tofu, drained
  • 1 tablespoon olive oil or vegan butter
  • 2 tablespoons nutritional yeast
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon granulated garlic
  • 1/4 teaspoon black salt

Instructions

  • Add tofu to a large bowl and use a fork or potato masher to crumble tofu into small pieces. 
  • Add olive oil in non-stick skillet over low heat. 
  • Add tofu, nutritional yeast, turmeric, and garlic. Toss to coat tofu in seasonings. Cook over low to medium-low heat until liquid from tofu has cooked off and tofu is warm. 
  • Season with salt and pepper. Taste and add more salt as needed.
