Strawberry and Chocolate Cookies

Freeze dried berries are the perfect addition to classic chocolate chips cookies – you’ll be sure to fall in love with these strawberry and chocolate cookies!

This week has been a bit crazy/hectic and I was totally craving one thing – cookies. Last weekend, I picked up a bag of freeze dried strawberries from Trader Joe’s. Have you had those before?

The texture is so strange, but they are kind of addicting! Anyways, I had the crazy idea to add them to  chocolate chip cookies. I mean, I have tried blueberries in cookies before (check out these blueberry oatmeal cookies) so strawberries should be tasty too, right? We loved these strawberry and chocolate cookies so much and they didn’t last long in our house!

Ingredients You’ll Need

  • Whole wheat flour: I like the flavor of whole wheat flour but you can use all purpose flour for these strawberry cookies.
  • Baking powder & baking soda: this give the cookies just a little bit of lift since we’re using whole wheat flour which is a little more dense than all purpose flour.
  • Butter: allow your butter to soften slightly before using in this healthy strawberry cookie recipe since it will be easier to cream together with he sugar if it isn’t cold and hard from the fridge.
  • Brown sugar and white sugar: using a combination of both types of sugar gives you a chewy strawberry cookie.
  • Dark chocolate: I love using dark chocolate in these cookies because it melts into these little puddles of chocolate in the cookie. Mmmm! However, you can substitute with chocolate chips.
  • Strawberries: you need to use freeze dried strawberries in this recipe. Fresh strawberries and frozen strawberries have too much liquid to work in this strawberry chocolate biscuit recipe.

How to Make Strawberry and Chocolate Cookies

Cream together the butter and sugar: In a large mixing bowl, mix the butter and sugars together until smooth. Add the egg and vanilla and mix well.

Stir together the dry ingredients: In a separate bowl, combine the flour, baking powder and soda, and salt.

Combine: Gradually add the flour mixture to the butter mixture and mix until smooth. Stir in the chocolate and strawberries.

Bake: Bake for 12-14 minutes or until lightly browned. Allow cookies to cool a minute or two on the baking sheet before transferring to a cooling rack to cool to room temperature.

Storage

  • Counter: cookies can be stored on the counter in an airtight container for up to 7 days.
  • Freezer: store cooled cookies in an airtight container or ziplock freezer bag in the freezer for up to 6 months. Allow to thaw on the counter overnight (or you can pop one into the microwave to warm up for a few seconds.)

Ingredients
  

  • 1 1/2 cups whole-wheat flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoons sea salt
  • 1 stick salted butter
  • 1/2 cup dark brown sugar
  • 1/2 cup granulated white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 4 ounces dark chocolate chopped in 1/4 inch pieces
  • 1/2 cup chopped freeze dried strawberries

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large mixing bowl, mix the butter and sugars together until smooth. Add the egg and vanilla and mix well.
  • In a small bowl, combine the flour, baking powder and soda, and salt.
  • Gradually add the flour mixture to the butter mixture and mix until smooth.
  • Stir in the chocolate and strawberries.
  • Scoop dough on to a cookie sheet by the tablespoon-full.
  • Bake for 12-14 minutes or until lightly browned.

    Aw this looks lovely too! Do you have any other substitutions for the freeze-dried strawberries? Do you think I could use dried fruit or maybe just leave it out completely? I’ve got no freeze-dried strawberries where I am 🙁

      I haven’t tried the recipe with regular dried berries, but I think they would make a fine substitute!
