Add this delicious and simple carrot ginger juice recipe made in the blender to your morning for a bit of sunshine in a glass! Pair this bright orange juice with your favorite breakfast entree like oats or eggs for a healthy balanced breakfast.
Start your day on a bright note by adding a glass of this sunny homemade carrot and ginger juice that can easily be made in a juicer or blender. I love whipping up a glass of this carrot juice or my blender beet juice whenever I have a few extra veggies on hand that need to be used up – vegetable juice recipes are a great way to prevent food waste!
Vegetables juices like this one are a delicious way to sneak in extra nutrients into your day. Since veggie juices aren’t a good meal replacement, I like pairing this carrot and ginger juice with something like my lemon blueberry baked oatmeal, a vegan breakfast burrito, easy vegan spinach quiche, or my easy tofu scramble for a healthy breakfast.
Why You’ll Love this Recipe
- A refreshing and simple juice recipe with carrot, apple, ginger, and lemon that pairs well with a health breakfast or snack.
- Carrots are packed with vitamins that support skin and eye health as was as the immune system. They are also a rich source of antioxidants which help lower risk of chronic disease. Read more about carrot juice benefits later in this post.
- Easy to make in either a juice or a blender. Homemade juice can be much cheaper to make it at home rather than buying it at a local smoothie shop!
Ingredients You’ll Need
- Carrot: carrot is the primary ingredient in this carrot juice recipe and adds a delicate sweetness.
- Fresh Ginger: fresh ginger root is best since the flavor is so much stronger than ground. You’ll need about about 1/2 inch of ginger root for this recipe. Any leftover fresh ginger can be used in other recipes like this vegan cashew stir fry or rainbow salad with quinoa dressing.
- Apple: adds a bit more sweetness to balance out the spicy ginger and tart lemon. I like to use a sweet-tart apple variety like pink lady or honey crisp.
- Lemon: adds brightness and zip to this carrot juice. Fresh lemon juice is best. If you don’t have lemon, you can use the juice from 1-2 limes in a pinch but the flavor will be a bit different.
Variations
- Add Turmeric: add even more antioxidants by adding a 1/2 inch piece of fresh turmeric or 1/4 to 1/2 teaspoon ground turmeric before blending to make a carrot ginger turmeric juice.
- Add a Kick: before blending, add a pinch of cayenne pepper for a spicy kick.
- Add more Citrus: instead of apple, add an orange to the blender before mixing for an orange carrot ginger juice.
Step by Step
Step One: Add all of your ingredients to a high-speed blender with 3/4 cup of water.
Step Two: Puree until smooth. You can serve straight from the blender or strain with cheesecloth to remove the pulp.
Step Three: Add a fine mesh sieve over top of a bowl or measuring cup. Line with a piece of cheese cloth and filter carrot juice through to remove the pulp. You can also filter the juice through a nut milk bag if you have one.
Step Four: Pour juice into glass and top with ice (if desired). Serve fresh juice immediately or store in a jar in the fridge. I just love that bright orange color!

Recipe FAQs
Carrots are loaded in health-promoting nutrients, but no food (including carrots) can detox your body. Instead, our bodies are equipped with our lungs, liver, digestive system, and kidneys which do any “detoxing” or eliminating waste that we need.
There are no specific benefits to drinking carrot juice at a certain time of day. Add a glass to your diet whenever it fits into your routine – morning or night.
No, simply drinking carrot juice does not reduce belly fat. No food (even carrots) can specifically target weight loss in certain parts of the body (belly, hips, etc). However, regularly including lots of fruits and vegetables into your diet can help with weight management.
Carrot Ginger Juice Health Benefits
- Orange carrots are high in beta carotene which the body converts to vitamin A. Vitamin A is important for good vision, growth & development, and immune function.
- Carrots are also a good source of vitamin K1 (supports bone health), potassium (helps with blood pressure management), and vitamin B6 (important for metabolism).
- Lemons are a great source of vitamin C which is important for healthy skin as it supports the production of collagen, the structural component of skin, cartilage, and more.
- Ginger is a powerful antioxidant food thanks to bioactive compounds called gingerols. Antioxidants are important because excess oxidative damage in the body can lead to chronic diseases over time. Ginger also has anti-inflammatory properties as well.
