A couple of ingredients that I try to always keep on hand are sweet potatoes and beans. Why, you ask? I know these two things can be the base for this super easy and delicious dinner! I simply poke the sweet potato with a fork and bake in the microwave until soft. Then, I pile on lots of yummy toppings.
This is one seriously easy, yet healthy meal when you don’t have time or don’t want to cook. You could even make this a fun dinner for a get-together with friends. Just bake up a few potatoes and set out a variety of toppings so people can make their own loaded potatoes. Simple!
- 1 sweet potato
- 1/3 cup black beans
- 1 teaspoon taco seasoning
- Shredded cheddar cheese
- Sour Cream
- Poke sweet potato with a fork to make holes in the skin on all sides of the potato. Bake in the microwave 7-10 minutes or until soft.
- Combine black beans and seasoning.
- Cut potato in half and add toppings.
