Instagram post 2191852538863746504_33668799 Iโ€™m making this #vegan spaghetti squash with red pepper sauce for dinner tonight. ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹ The sauce couldnโ€™t be simpler! Just puree these together in your blender:
- 1 cup raw cashews
- 1 (14.5 oz) can diced fire roasted tomatoes
- 2 tablespoons tomato paste
- 16 oz jar roasted red peppers (drained)
- 1/2-3/4 cup vegetable broth
- 2 cloves garlic
- 1/2 tablespoon Italian seasoning
- Salt & black pepper to taste
Add to pasta or spaghetti squash and serve with a protein (Iโ€™m eating mine with seitan). Sprinkle with some nutritional yeast. ๐Ÿ˜‹Simple and tasty! ๐Ÿ™Œ๐Ÿ™Œ๐Ÿ™Œ

This one pot red lentil pumpkin soup is super simple to make and hearty enough to enjoy all winter long. ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹ (We can still make pumpkin recipes after Thanksgiving right?!) Apple nachos! ๐Ÿ˜‹ @starr_ranch_growers sent me some of their delicious Juici variety apples and they are perfect for serving up nacho style. ๐Ÿ™Œ I just slice one up and drizzle it with some warm peanut butter and coconut butter, then sprinkle with some coconut chips, cinnamon, hemp hearts, and pumpkin seeds.
